Kitano Hospital has a registered dietitian in each ward, and I am in charge of the cardiovascular ward. My main job is to manage and provide nutritional guidance to patients.
Many patients say things like, "I don't want to change my diet," or "I don't want to cut back on salt because it doesn't taste good." In such cases, rather than suddenly giving them nutritional advice, I visit them in their rooms frequently, chat with them about trivial matters, and build a relationship of trust, before carefully explaining to them how important it is to improve their diet for the future.
In order to empathize with the patients, I also practice a low-salt diet myself. I think about seasonings and cooking methods that are tasty even with low salt, such as vinegar and sesame oil, and reflect this in the meals I serve my patients.
On her days off, she enjoys knitting characters and motifs while surrounded by the figurines and stuffed toys she has steadily collected since childhood. One time, when she found a knitting motif displayed next to a patient's pillow, she couldn't help but call out to him, and the two ended up having a lively conversation about their hobbies.
